The pork roast has long been a favorite dish of the Bavarian cuisine. Historically, it was only affordable to the wealthy. In 1835, when meat prices doubled, the pork roast was only affordable to royalty. Gradually over the years, the pork roast has become affordable to the less wealthy and today is enjoyed as a Sunday, holiday, or special occasion dish.

Main Ingredients

Pork, usually the loin or shoulder cuts.

Serving Suggestions

The pork roast is traditionally served with red cabbage, Sauerkraut, or green cabbage, as well as with dumplings (potato dumplings or bread dumplings). It is also always served and eaten with a sauce.

Potato salad is a dish made from boiled potatoes, the versions of which

Potato salad is a dish made from boiled potatoes, the versions of which vary throughout different regions and countries of the world. Although called a salad, it is generally considered a side dish, as it usually accompanies the main course.

Potato salad is often served with barbecue, roasts, hot dogs, fried chicken, hamburgers and cold sandwiches. It is generally considered casual fare, and as such is typically served at picnics, outdoor barbecues, and other casual meals and events.

It is a popular menu choice of cooks preparing food for a large number of people, because it is easily made in large quantities, it can be prepared in advance and refrigerated until needed, and requires inexpensive ingredients.

Types of Potato Salad

General versions of potato salad include:

salad made with baby potatoes, cooked in their jackets and left whole (skin on)

larger potatoes, cooked in their jackets and then peeled and cut

salad with a mayonnaise, Miracle Whip, sour cream or milk dressing

salad with vinegar dressing

salad with bacon, anchovies, or mustard.

salad with a fresh herb or dill dressing and/or chives, scallions, tarragon, gherkins, capers or other items.

salad with raw onions, cooked onions or pickled onions.

salad with tomatoes or green beans.

salad with hard-boiled eggs (a combination of potato salad and egg salad)

salad with ham, pickles, corn, hard-boiled egg and tomato (known in France as salade piemontaise)

salad with orange slices, Worcestershire sauce, bacon, and chives.

Different versions of potato salad are served at different temperatures. Most potato salads are served at room temperature or chilled, though the southern German variant may be served warm as well. In the U.S. and northern Germany potato salads are commonly served chilled and require refrigeration beforehand

Coleslaw, sometimes simply called slaw in some American dialects, is a salad consisting

Coleslaw, sometimes simply called slaw in some American dialects, is a salad consisting primarily of shredded raw cabbage. It may also include shredded carrots, and other fruits and vegetables (apples, onions, green onions, peppers), as well as various spicesThe term “coleslaw” arose in the 18th century as an Anglicisation of the Dutch term “koolsla”, a shortening of “koolsalade”, which means “cabbage salad”. It is originally from Ireland and was made at the end of the month from leftover vegetables and cream.

More

There are many variations of the recipe which include the addition of other ingredients, such as red cabbage, pepper, onion, grated cheese, pineapple, or apple, mixed with a salad dressing such as mayonnaise. In the U.S. coleslaw often also contains buttermilk or mayonnaise substitutes, andcarrot; although many regional variations exist, and recipes incorporating prepared mustard or vinegar are also common. Barbecue slaw, also known as red slaw and commonly found in the Piedmont region of North Carolina, is made using ketchup and vinegar rather than mayonnaise.

A variety of seasonings, such as celery seed, may be added. The cabbage may come in finely minced pieces, shredded strips, or small squares.

Coleslaw is generally eaten as a side dish with foods such as barbecue,French fries, and fried chicken. It may also be used as a sandwichingredient, placed on barbecue sandwiches, hamburgers and hot dogs along with chili and hot mustard. It is sometimes seen in delicatessens on variants of the Reuben sandwich – with coleslaw substituting for the sauerkraut and dressing, the meat being either pastrami or corned beef, and the sandwich commonly called “Rachel” instead of “Reuben” (also simply “Corned Beef Special”). A variation of coleslaw made with vinegar and oil is often served with pizza in Sweden.

A variation of coleslaw, cheese savoury, is popular in the northeast of England. It includes cheese, onion, and has salad cream instead of mayonnaise. Another variant, broccoli slaw, uses shredded raw broccoli in place of the cabbage.
